Had a very productive afternoon in the kitchen 😊 Roasted some granola for the week ahead!

Combine 3 cups oats and 1 cup of mixed nuts and seeds in a large bowl (I used pepitas, sunflower seeds, almonds, hazelnuts) I also used raw coconut shavings.

Process 1 cup pitted dates, 1 tsp pure vanilla extract and 1 cup of water which you can add gradually until you get a syrup like consistency. 

Stir through the date mixture with the dry ingredients.

At 150 degrees C toast the mixture on a baking tray for around 30-40mins, turning it every 10 minutes so it browns evenly. 
Once your time is up, let the tray sit in the oven while it’s off for another 20mins to dry out.

Add in your choice of dried fruit - goji berries and dried cranberries for me - jar it up and use it on whatever you like!
